Recipe: How to make our Coconut and Lime cake

In line with our new cake launch we thought we would share one of our favourite recipes – the coconut & lime cake. This is a deliciously moist cake with a zesty lime syrup and a coconut & lime icing sprinkled with desiccated coconut, perfect for the summer!

Coconut and lime cake:


For the base:

  • Baking powder: gluten free – 2 grams
  • Bicarbonate of soda: 3 grams
  • Butter: 90 grams
  • Caster Sugar 250 grams
  • Coconut milk: 200ml
  • Desiccated coconut: 35 grams
  • Eggs: 3
  • Greek yoghurt: 50 grams
  • Limes: 2
  • Plain flour: 290 grams


  • Coconut milk: 40 ml
  • Desiccated coconut: 50 grams
  • Icing sugar: 280 grams
  • Limes: 1


  • Caster sugar: 80 grams
  • Limes: 1
  • Water: 150 ml


  • Caster sugar: 60 grams
  • Coconut milk: 40 ml
  • Greek yogurt: 70 Grams
  • Limes: 1


For the base:

  1. Turn the oven up to 175 degrees and line a loaf tin with baking parchment paper.
  2. Then mix the sugar and butter in a large bowl until light and fluffy.
  3. When you’ve got the right texture, add the eggs one at a time whilst continuously mixing.
  4. Grab another bowl and mix together the flour, bicarbonate of soda and the desiccated coconut. Once they are all mixed, add the mixture to the eggs, flour, sugar and stir until smooth.
  5. When all the ingredients are combined, add the coconut milk, yogurt, the zest of two limes and the juice of one.
  6. Blend until completely smooth. Pour the batter into your pre lined loaf tin and put it in the oven for 50-60 minutes! (check with a knife – if it comes out clean, the cake is cooked! If it doesn’t, it will need longer in the oven.)

Now the cake is in the oven – it’s time to do the syrup.

  1. Mix all the ingredients together in a pan and heat until all is dissolved and it becomes a syrup.
  2. Pour 250ml of the syrup over the cake whilst still warm and in the loaf tin and leave the cake until it has completely cooled.

Whilst the cake is cooling, it’s time to make the glaze!

  1. Mix the yogurt, sugar, lime zest and lime juice in with the coconut milk.
  2. Now that the cake has completely cooled, get a knife and poke holes into the cake to allow the glaze to go through the into sponge.
  3. Spread the glaze all over the cake including the sides!

Last but not least, let’s make the icing!

  1. Mix together the sugar, lime juice and coconut milk until nice and smooth.
  2. Pour all the icing over the top and sides of the cake so it’s nice and smooth.
  3. Now finally sprinkle with desiccated coconut all over the icing!
